it's been awhile, huh

Well it's been awhile because I have been super busy...Chris tore a ligament in his foot and has been down for the last few weeks and to make it better it happens to be his right foot so he cannot drive.....to work or anywhere else for that matter....so i have been miss chauffer...

also some more exciting news, Chris got promoted to a store manager effective in April. We are so proud of all his hard work and that it is finally paying off. With the promotion comes a transfer though...a quite big transfer...as of now it looks like it will be to Albuquerque, NM but there is still a chance it will be Elko, NV. We are hoping for NM. Now nothing is official until he signs the offer so hopefully i won't regret letting the cat out of the bag but we will keep everyone updated on that as we find out more info.

and even more exciting news we got a slr camera! I LOVE IT! I've always loved photography and I am glad I get to finally pursue it. So expect lots of pictures and if anyone wants pictures done let me know and i'll do them. I want practice! and it is seriously so fun for me to take pics. So here are a few pics i've taken the last week.

Slow Cooker Cuban Braised Beef and Peppers





I saw this recipe in a Real Simple Magazine and it looked so delicious I just had to try it. It was very yummy. I loved the peppers, onions and tomatoes in it and the meat was just so tender. Here's the recipe from realsimple.com


Serves 4Hands-On Time: 10mTotal Time: 8hr 30m

Ingredients

  • 1 28-ounce can diced tomatoes, drained
  • 2 red bell peppers, sliced 1/2 inch thick
  • 1 onion, cut into 8 wedges
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • kosher salt and black pepper
  • 1 1/2 pounds flank steak, cut crosswise into thirds
  • 1 cup long-grain white rice
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro leaves

Directions

  1. In a 5- to 6-quart slow cooker, combine the tomatoes, bell peppers, onion, oregano, cumin, 1½ teaspoons salt, and ¼ teaspoon pepper. Nestle the steak among the vegetables. Cook, covered, until the meat is tender and pulls apart easily, on high for 4 to 5 hours or on low for 7 to 8 hours.
  2. Twenty-five minutes before serving, cook the rice according to the package directions.
  3. Using two forks, shred the beef and mix it into the cooking liquid. Serve with the rice and top with the avocado and cilantro.

my thoughts on Wuthering Heights

So my bff and I decided to start a two person book club together, where we hold meetings via text. lol So we decided we would be a little adventurous and start off with Wuthering Heights. Now with Christmas we haven't been able to keep up with reading like we hoped (we are only on ch.3 hehe) but after the hustle and bustle we should be able to  pick up the pace.
So I thought maybe I would keep my thoughts on the book on here as I read.


The only thought I have on Wuthering Heights right now is:
Why are the heathcliffs so rude, negative and mean. I assume if I keep reading I will soon find out.
